Mashed Potato Parsnips
1 lb or 4 parsnip (about 2 cups of cut parsnip)
1/2 cup pine nuts or hemp seeds
1cup warm water
1 Tbs. of lemon (optional)
Gravy
1 cup walnuts
3/4 cup warm water
4-5 medium size mushrooms
1 Tbs. soya sauce
1/2 shallot or small onion
1 Tbs. Italian seasonings or any with rosemary
1 lb or 4 parsnip (about 2 cups of cut parsnip)

1 cup walnuts
3/4 cup warm water
4-5 medium size mushrooms
1 Tbs. soya sauce

Methods/steps
Mashed Potato Parsnips
Cut parsnips in to pieces. Add all ingredients in to blender Vitamix.
A food processor will not work because it will not smash it to a smooth puree.
Can be served with the gravy.
Gravy
Chop mushrooms into small pieces
Mix everything, except of mushrooms in a blender until creamy (if your blender is not as powerful as a Vitamix then simply soak the walnuts overnight first and then blend. Simply add more water if you like your gravy to be less thick.

Note: The parsnips make the recipe a little sweet.
