Borscht (also known as: borsch, bortsch, borstch, borsh, barszcz, or borshch) is very popular in Eastern and Central European countries. In most of these countries, it is made with beet root as the main ingredient. There are hundreds of variations and recipes. The cooked Russian vegan version ingredients are usually: beets, cabbage, potatoes, carrots, tomatoes, garlic, onions, beans or mushrooms, and for flavor: parsley, dill, bay, black pepper. Raw vegan Russian borscht is very nutritious and refreshing.
